After I eat dinner I always want a little something sweet. I can get carried away at times so I try to make something that is healthy and sweet to satisfy my cravings. I created a simple and healthy dairy free/vegan raspberry chocolate mousse that is a little tart and sweet! My husband and daughter love it too; it’s perfect for the whole family. The added health benefits of the cacao and coconut milk are a plus. Below are the reasons why I love these two ingredients so much!
Coconut milk
- lowers cholesterol
- improves blood pressure
- has little sugar
- healthy fats
- high in iron, magnesium, potassium, zinc
Cacao
- purest form of chocolate, raw and less processed
- great source of antioxidants, magnesium, fiber
- no added sugars + fat compared to chocolate chips
Dairy Free Raspberry Chocolate Mousse
Tart and sweet vegan mousse
Ingredients
- 1 can of coconut milk (refrigerated over 12 hours)
- 1/2 cup frozen raspberries
- 1 tsp cacao powder
- 2 tbs agave nectar*
- cacao nibs**
- *can substitute agave nectar for honey
- **can substitute cacao nibs for chocolate chips
Directions
- Step 1 Refrigerate can of coconut milk overnight.
- Step 2 Add all ingredients and blend.
- Step 3 Top with cacao nibs.
- Step 4 Serve immediately or refrigerate for later.
